Ingredients
- 1 cup cooked quinoa 
- 1/2 lb smoked salmon, diced 
- 1 cup roasted butternut squash cubes 
- 1/2 avocado, sliced 
- 1/4 cup edamame 
- Pickled ginger 
- Radishes, thinly sliced 
- Soy sauce, sesame oil, and lime juice for dressing 
- Microgreens for garnish 
Instructions
- Assemble the bowl: Start with a base of cooked quinoa. Arrange roasted butternut squash, avocado, edamame, and radish slices, with smoked salmon displayed on top. 
- Drizzle: Mix soy sauce, sesame oil, and lime juice for a simple dressing, and drizzle over the bowl. 
- Garnish: Top with sesame seeds, pickled ginger, and microgreens for a fresh finish.
